5,Character: It is white or colorless rhombic crystalline or prismatic crystal. It’s easily soluble in water, but insoluble in ethanol. The relative density is 1.63 and  melting point is 34.6°C. If heated to 180°C, it may lose crystal water, convert to anhydrous.

Applications

Used as improver, pH regulator, alimentary fortifier, emulsified dispersant in food industry. Mainly applied to cheese, drinks, jelly, ice-cream.
used as boiler water softening agent, the flame retardant and waterproof agent for woods, papers and textiles,
dyes auxiliaries, treating agent in electroplating industry,glaze, flux, and the production of purgative prescription. The upper grade is used as additive to produce baking powder, etc.
Used as a fire-prevention agent for fabric, timber, and paper, also as water softening agent for boiler, food additive, buffering agent, solder, tanning agent, in baking powder; as food additive, emulsifier, nutritional supplement, fermentation auxiliary, adhesive. etc..
